2019 Reserve Cabernet Sauvignon
I can’t say enough about the 2019 vintage. It was in my opinion, simply the best of the decade and this Cabernet is sheer proof of that. Stag Canyon sits on the eastern portion of the Santa Ynez Valley and is perfect for growing world class Bordeaux varietals with its rocky soils and tight spacing. The wine was fermented using native yeast and aged for 3 years in 40% new Mercury French oak barrels that were originally crafted to age Chateaux Margaux.
Tasting Notes:
Deep aromas of dark plum, currant, blackberry, and olive, along with scents of crème de cassis, sandalwood, bing cherry, and violet. Rich flavors coat the mouth with dark plum, boysenberry, and dark cherry that give way to a core of dark chocolate covered cherries, espresso, leather, and sweet herbs. The finish is very complex with tightly wound tannins that last.
100 cases produced. Drink now or age for up to 20 years.
